Beef and Orange Lettuce Cups

Ingredients::

  • 16 boston, bibb or romaine lettuce leaves

  • 1 lb grass-fed beef or bison 

  • 1 cup onion- diced (1 medium onion)

  • 2/3 carrots- chopped (3 medium sized carrots)

  • ½ cup shiitake mushrooms- chopped

  • 3 cloves garlic- minced

  • 2 teaspoon ginger-minced

  • 1 bunch scallions- chopped 

  • 2 teaspoons avocado oil

  • ¼ cup hoisin sauce

  • 1 tablespoon coconut aminos (or soy sauce)

  • 1 teaspoon spicy chili crisp (or red chili flakes)

  • 2 teaspoons toasted sesame oil

  • ½ orange squeezed



Instructions

  1. Wash lettuce leave and set aside

  2. Heat a large skillet over medium-high heat. Add 1 teaspoon avocado oil. Cook beef until browned and crumbly- about 5 to 7 minutes. 

  3. Drain and discard fat. 

  4. Transfer beef to a bowl. 

  5. Add other teaspoon of avocado oil to the same skillet. Cook onion and carrots until onion is translucent and carrots are soft- about 5 to 10 minutes. 

  6. Add shitake mushroom and toss with carrots and onions.

  7. Stir hoisin sauce, garlic, coconut aminos, ginger, and spicy chili crispy sauce into onions. 

  8. Add toasted sesame oil, and cooked beef. Cook and stir until for a couple of minutes to let the flavors come together

  9. Squeeze the juice of ½ an orange onto the mixture. Stir.

  10.  Place lettuce leaves on plates.

  11.  Add a scoop of mixture to each leaf

  12.  Garnish with green onion.
