Sweet Potato Pizza Crust

Move over cauliflower - there’s a new pizza crust in town. This recipe is in the same vein that I have been on this week: high anti-oxidant, high fiber, high nutrient-dense foods to help prime your immune system for the incoming fight against corona virus. Plus it is crazy delicious!

Makes 4 individual sized pizzas

Ingredients

4 Small of 2 medium/large sweet potatoes

2 eggs

1.5 cups oat flour

salt, pepper, garlic powder, onion powder, and oregano to your taste


Instructions:


1. Preheat oven to 400 degrees

2. Peel your sweet potatoes.

3. In a food processor, mix above ingredients until smooth

4. On oat flour dusted parchment paper spread and shape your pizza crusts. They might be a little sticky. You can make one large crust, 2 mediums, or 4 small ones. My kids like building their own so I do 4 small ones.

5. Bake in the oven for 20 Minutes. When they come out they should be stuff and you should be able to flip them over easily.

6. Add your toppings. I did a little red sauce and sautéed garlicky kale on mine. We also had red onions, sautéed shiitake mushrooms, artichoke hearts, jalapeños, and Miyokos Creamery non-dairy mozzarella cheese.

7. Once you have arranged your pizza, put it back in the oven for another 15 minutes or so.
